Yield: 5 cups.
2 cups Old Fashion Oats
1/2 cup Walnuts (can use Walnuts and/or Pecans))
1/2 cup Unsweetened Coconut Flakes
1/4 cup Raw Pumpkin Seeds

1/2 tsp. Kosher Salt
1 cup (.70 oz.) Freeze-dried Pineapple (2 pkgs), roughly chopped in large pieces
1/2 cup. Honey
1/4 cup Virgin Coconut Oil

Toss first 6 ingredients in a large bowl, then add pineapples and toss again.
Heat over med-low the next three ingredients in a small pan, stirring until melted and the mixture takes on a creamy texture.
Pour hot mixture over oat mixture and combine to coat completely.
Spread mixture on a parchment-lined baking pan and bake for 10 minutes; remove from oven, stir and spread out again.
Return and bake until golden brown and crisp, approx. 8-10 minutes. Remove, stir again, and spread out again on a pan. Let cool.
