Tropical Granola

A different take on a very versatile item. In addition to healthy oats, enjoy the flavor of pineapple, coconut, walnut, and pumpkin seeds coated in coconut honey glaze with a hint of cinnamon-vanilla flavoring. Try this texture-loaded topping on yogurt, fruit, pudding, ice cream, smoothie or as a healthy snack!


Prep Time: 30 min.       

Cook Time: 18-20 min.   

Yield: 5 cups.

Ingredients:

2 cups                Old Fashion Oats

1/2 cup              Walnuts (can use Walnuts and/or Pecans))

1/2 cup              Unsweetened Coconut Flakes

1/4 cup              Raw Pumpkin Seeds

3/4 tsp.              Cinnamon

1/2 tsp.               Kosher Salt

1 cup (.70 oz.)     Freeze-dried Pineapple (2 pkgs), roughly chopped in large pieces 

1/2 cup.              Honey

1/4 cup               Virgin Coconut Oil

1 tsp.                    Vanilla Extract

 

Directions:

  • Toss first 6 ingredients in a large bowl, then add pineapples and toss again.

  • Heat over med-low the next three ingredients in a small pan, stirring until melted and the mixture takes on a creamy texture.     

  • Pour hot mixture over oat mixture and combine to coat completely.

  • Spread mixture on a parchment-lined baking pan and bake for 10 minutes; remove from oven, stir and spread out again.

  • Return and bake until golden brown and crisp, approx. 8-10 minutes. Remove, stir again, and spread out again on a pan. Let cool.

  • Can be made up to 10 days ahead.  Store at room temperature in an airtight container.
