Sweet Cherry Loaf

Enjoy this Sweet Cherry Loaf as a morning eye-opener with a cup of morning “Joe” or as an end of the day reward with your favorite ice cream.  Any way you look at it, it just makes the day better!

Prep Time: 30 min.

Baking Time: 30-35 minutes.

Yield: 3-4 Mini Loaf Pans.

Ingredients:

2 cups (6 oz.)       All-purpose Flour, sifted

1.5 tsp.                  Baking Powder

½ tsp.                   Salt

½ cup (4 oz.)       Butter, softened

1 cup (8 oz.)        Granulated Sugar

2 (3.5 oz).             Large Eggs

1/2 tsp.                Almond or Vanilla Extract

1 tsp.                    Orange Zest

¼ cup                  Sour Cream

½ cup                  Water

1 oz.                      C2 Production Freeze-dried Sweet Cherries, lightly crushed (if smaller pieces are desired, you can crush more). 

***                         Mixture of Cinnamon and Sugar as topping

Directions:

  • Preheat oven to 350 degrees. Grease pans with baking spray or melted butter.

  • Sift dry ingredients together. Mix the sour cream and water (should be fluid).

  • Cream the butter and sugar. Add eggs, one at a time, followed by almond extract. Beat the mixture on high speed until light and fluffy.  

  • On low speed, mix in flour mixture alternately with liquid, ending with flour mixture. Mix only until smooth, do not overmix.

  • Gently fold in crushed cherries, do not over mix.

  • Fill prepared pans ½ to 1/3 full. This recipe does not create a crown on the loaf. Sprinkle cinnamon sugar over top and place pans on sheet pan.

  • Bake for 30-35 minutes. Product is done with toothpick comes out clean. Cool on cooling rack before removing from pan.
